“A cuvée which I first produced back in 2020, as an hommage to my late grandfather who would heroically open a bottle of Côtes du Rhône most mornings before midday.

The fruit is sourced from an organic producer in Seguret. 60 year old Grenache and Mourvèdre, and 15 year old Syrah.

The wine is energetic, fresh and deep. A combination of the maturity of the fruit, fermentation whole bunch in a concrete tank; and the addition of the Mourvèdre juice, adds lightness and crunch to the pallet”

“Three vineyards located on the top of the hills (le plateau) around the Rhône.

Vinified separately and blended before bottling. Ageing in old oak barrels, of varying sizes.

The wine is low alcohol, spicy and juicy. All I want from a young bottle of Syrah. The wine is very approachable now, but will be very happy to lay in a cellar for a number of years before being enjoyed to its maximum potential.”‍

“A bright and playful wine, very pretty. The grapes were harvested with low alcohol and high acidity in mind. I wanted a wine with great drinkability.

Extraction was kept to a minimum, and the wine was aged in the same tank in which it was vinified. No oak was used in order to keep the wine tight and young.”

“Grenache noir on sandy soils is always a recipe for something special. Right around the corner from the illusive Château Rayas; the quality of the terroir is outstanding.

Declassified to VDF as my cellar sits just outside of the appellation zone.

The wine is complex and age-worthy. Despite being very moorish in its youth; I advise to leave the wine alone for some time.”

“A fresh and tonic style of Chardonnay. I wanted to make a higher acidity style and explore the terroir I know very little about.

The wine is mineral and citrus, something which invites you back to cleanse the your pallet.

Perfect for ‘apéro’ or with some light summer ingredients.”

“A 50 year old organic vineyard set deep in the limestone hills of the village of Seguret. Grenache Blanc and gris co-planted.

The grapes had 24 hours of maceration to draw some bitterness and tanin from the stems and skins; to accompany the sunny and ripe juice.

The wine was aged 8 months in barrel followed by 4 months in tank to allow the wine some oxygen integration followed by time in a closed environment to retighten the wine.

The wine will be best enjoyed after a couple of years in bottle. ”

“A peachy, deeper tinted rosé. Just as suited on a terrace in the sun, as it is on the table accompanied by food. Drink a bottle and you’ll start seeing life through a pair of ‘rosé tinted lenses’.

The wine has a wonderful balance of ripe fruit with a high acidity, inviting you back for another swig. ”

“It’s a true honour to be able to vinify some grapes from Cornas, quite possibly my favourite appellation of the Northern Rhône.

While it might not be old vines in Chaillot, I cannot sniff at the opportunity; and the outcome is truly ‘Cornas’!

A steep sloped plot at the bottom of the hill, north facing. The 10 year old vines and the typical high density planting on échalas, right into the decomposing granite rock; gives a wine of purity and clarity. A true expression of Syrah.”
